Grain + Dairy Free Cobbler
This delicious take on cobbler is great for those who want a treat but have various health conditions that flare with processed foods and too much refined sugar.
- 2 tbsp cinnamon
- 1 tsp sea salt
- 1 tbsp coconut oil (melted)
- 2 tbsp grass fed butter (optional)
- 2 eggs
- 1 cup ground hulled sunflower seeds (**Or other nut/seed of choice)
- 2 cups blanched almond flour
- 3-4 cups fruit of choice (**Frozen mixed berries also work really well**)
- 10-15 drops liquid stevia
- 1. Pre-heat oven to 350 degrees.
2. In a bowl, mix together cinnamon, ground sunflowers seeds, almond flour and sea salt. Add the two eggs plus melted coconut oil and 10-15 drops of liquid stevia. Mixture should feel similar to a pasty dough.
2. Next, chop up fresh seasonal fruit or use 2 bags of frozen mixed berries. Layer the bottom of a 9×13 glass dish (we use Pyrex).
3. “Crumble” your dough on top of the fruit piece by piece (aim for it to look similar to the photo).
4. Prior to putting in oven, an option is to drizzle 2tbsp grass fed butter over the mixture.
5. Place in oven for about 35 minutes. You’ll know it’s done when it looks golden brown.
6. Remove, let sit for 10-15 minutes and then enjoy!
